Tasty Tuesday {Cocktail Hour}

Happy Tuesday everyone! I hope your week is going fine and dandy this far in the week. Today we have some delicious recipes for fun in the sun. Below are some recipes found on the amazing Pinterest.



Watermelon Mojito

Yield: 2
Prep Time: 10 Minutes
Total Time: 10 Minutes

ingredients:

1 1/2 cup Watermelon, cubed
8 Mint Leaves
2 Tbsp Sugar
4 oz. Rum
1 1/2 cup Club Soda
4 Tbsp Lime Juice
4 slices Lime,
2 slices Watermelon, for garnish
2 cups Ice



Lavender Blueberry Lemonade

Yield: 4
Prep Time: 20 minutes
Cook Time: 15 Minutes
Total Time: 35 Minutes
Refreshing English Garden Cocktail

ingredients:

2 cups Water
1 cup Sugar
1 1/2 Tbsp Lavender Buds, dried
2 Lemons, juiced
3/4 cup Blueberries
1/2 cup Vodka
Ice

directions:

In a sauce pan over medium high heat, combine water and sugar. Bring to a boil and stir to dissolve sugar. Turn off heat. Stir in lavender buds and allow to steep for 5 minutes. Strain simple lavender syrup into a bowl to allow to cool and simultaneously remove the lavender buds.
Into a pitcher, juice lemons, pour in vodka and add in blueberries. Add in desired amount of ice. With a muddler or a large spoon, smash together until blueberries have released their juice and color. When lavender syrup is cooled, pour over ice - stir and pour into double old fashioned glasses with additional ice. Garnish with additional lemon slices.
*Note* If you want to make a non-alcoholic version, simply omit the vodka. Then its kid friendly


Mom’s Favorite Raspberry Mojitos
Makes 2 large mojitos over ice
the juice of 1/2 a lime (freshly squeezed)
1 cup fresh raspberries
1/4 cup granulated sugar
2 ounces rum
1 ounce raspberry liqueur
3-4 fresh mint leaves
Simple syrup, to taste
1/4 to 1/2 cup of lime seltzer
ice
lime slices & mint leaves, for garnish
Begin by placing the lime juice, berries, sugar, booze & 3-4 mint leaves in a deep glass container. If you have a muddler, put it to good use. If not, use a sturdy wooden spoon and smash all the ingredients to a pulp. Literally. Place the container in the fridge and allow your fruit sludge to chill for at least one hour. The theory is to let the fruit macerate in the booze and sugar until the flavors are beautifully infused.
While your fruit is macerating, make a simple syrup by placing one cup of water and one cup of granulated sugar into a small saucepan. Heat to a boil, then remove from the heat and allow it to cool completely.
To serve, strain the fruit mixture equally into two serving glasses. Add simple syrup to taste, then add 1/4 to 1/2 cup of lime seltzer. Stir with a spoon and sample. Tweak the simple syrup or seltzer to your personal preference. I like them a little on the sweet side. You may like them with more seltzer. Garnish with a slice of lime, a fresh mint leaf and a colorful straw. If you’re feeling fancy schmancey, toss in a few fresh raspberries. Then pull up a lawn chair and sip until you forget it’s 103F outside.
