Tasty Tuesday

Looking for an easy dinner you can throw on the grill but tired of hamburgers and hot dogs? I have found just the thing for you! This delicious recipe gives you the ease of grilling without the same boring tastes. And you know it's good as it is provided by Disney's Family Fun Website. The great thing about this website is that is provides the nutritional information as well so you always know what your feeding your little ones.


Use a chicken breast just as easy if your store does not provide the ground chicken.

Ingredients
  • FOR THE BURGERS:
  • 1 1/2 pounds ground chicken
  • 3/4 cup grated sharp Cheddar or 1/2 cup finely grated Parmesan
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 1/3 cup mayonnaise
  • 2 tablespoons pesto (store-bought or your favorite recipe)
  • Oil for brushing the burgers
  • 6 burger rolls
  • Lettuce
  • Sliced tomatoes
  • FOR THE PESTO MAYONNAISE:
  • 1/2 cup mayonnaise
  • 2 tablespoons pesto
Instructions
  1. Line a medium-size baking sheet with plastic wrap and set it aside. In a large mixing bowl, combine the ground chicken, cheese, salt, and pepper, gently tossing the mixture with your hands or a large fork, until evenly blended.
  2. In a small bowl, mix the mayonnaise and pesto, then add it to the ground chicken mixture and combine until evenly blended. Shape the meat into six 1/2-inch-thick patties, placing each one on the lined baking sheet as you go. Cover the burgers with plastic wrap and refrigerate them for at least 30 minutes to firm them. (Note: The patties will be softer than traditional hamburgers.)
  3. While the meat is chilling, prepare the grill and make the Pesto Mayonnaise (just combine the ingredients in a small bowl). Then brush one side of each of the burgers with a little oil and place them on the grill, oiled side down. Lightly brush oil on the other side of the burgers and cook them for 5 minutes on each side, turning once, or until the meat is no longer pink inside.
  4. Serve the burgers on the rolls, dressed with the lettuce, tomatoes, and Pesto Mayonnaise. Makes 6 burgers.

Tasty Tuesday {Summertime Recipes}

Hey Ya'll!

Sorry for not posting the last few weeks. Things have been hoppin' around here. So thank you for checking back in! Boy do we have some awesome recipes for you!

Summertime is a season with a menu all it's own. We enjoy certain foods more often and eating them outside :)

Below are some recipes for those corn lovers out there courtesy of Sunset.

Summertime recipes: Corn

Blue cheese cornbread: Add freshly cutcorn kernels to your favorite cornbreadbatter along with blue cheese and chopped fresh chives.

Jalapeño creamed corn: Simmer freshly cut corn kernels and some choppedjalapeño chile with a little milk just until corn is tender, then whirl a portion of the mixture in a blender until smooth. Return to pan and simmer briefly with a pinch ofsugar, salt, and pepper. Stir in some shredded cheddar or jack cheese if you like.

Grilled corn with parm spread: Whisk together equal parts mayonnaise, Dijon mustard, and ketchup. Brush on grilledcorn on the cob and sprinkle withparmesan cheese.
